For the Crust:
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper (optional)
- 1 cup sour cream
- 1 cup shredded Monterey Jack cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
- Stir in shredded chicken, white beans, green chilies, chicken broth, cumin, oregano, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in sour cream and shredded cheese until well combined and creamy. Season with salt and pepper to taste. Simmer for another 5 minutes.
- Serve hot, garnished with fresh cilantro and additional cheese if desired.
