White Chicken Chili

A creamy and comforting chili made with tender chicken, white beans, and green chilies, perfect for a cozy meal.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
  2. Stir in shredded chicken, white beans, green chilies, chicken broth, cumin, oregano, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in sour cream and shredded cheese until well combined and creamy. Season with salt and pepper to taste. Simmer for another 5 minutes.
  4. Serve hot, garnished with fresh cilantro and additional cheese if desired.

You can customize the seasonings to taste.
