For the Crust:

  • For banana bites:
  • 3 medium ripe bananas (sliced into 1/2-inch rounds)
  • 1 tablespoon lemon juice (to prevent browning)
  • For chocolate coating:
  • 1 cup dark chocolate chips (or chopped chocolate bar)
  • 1 teaspoon coconut oil
  • For toppings (optional):
  • 2 tablespoons crushed nuts (almonds, peanuts, or pecans)
  • 2 tablespoons shredded coconut
  • 1 tablespoon chia seeds

Instructions

1. Prepare the Crust:

  1. 1. Line a baking sheet with parchment paper.
  2. 2. Toss banana slices with lemon juice in a bowl to coat evenly.
  3. 3. Freeze bananas on the prepared sheet for 1 hour until firm.
  4. 4. Melt chocolate and coconut oil together using a double boiler or microwave (30-second intervals, stirring between).
  5. 5. Dip each frozen banana slice halfway into chocolate, letting excess drip off.
  6. 6. Place dipped bananas back on parchment and immediately sprinkle with toppings if using.
  7. 7. Freeze for another 30 minutes until chocolate hardens completely.
  8. 8. Store in an airtight container in freezer for up to 2 weeks.

Notes

For best results, use bananas that are ripe but still firm. White chocolate or milk chocolate can be substituted. Add a pinch of sea salt on top for contrast.
