For the Crust:
- For banana bites:
- 3 medium ripe bananas (sliced into 1/2-inch rounds)
- 1 tablespoon lemon juice (to prevent browning)
- For chocolate coating:
- 1 cup dark chocolate chips (or chopped chocolate bar)
- 1 teaspoon coconut oil
- For toppings (optional):
- 2 tablespoons crushed nuts (almonds, peanuts, or pecans)
- 2 tablespoons shredded coconut
- 1 tablespoon chia seeds
Instructions
1. Prepare the Crust:
- 1. Line a baking sheet with parchment paper.
- 2. Toss banana slices with lemon juice in a bowl to coat evenly.
- 3. Freeze bananas on the prepared sheet for 1 hour until firm.
- 4. Melt chocolate and coconut oil together using a double boiler or microwave (30-second intervals, stirring between).
- 5. Dip each frozen banana slice halfway into chocolate, letting excess drip off.
- 6. Place dipped bananas back on parchment and immediately sprinkle with toppings if using.
- 7. Freeze for another 30 minutes until chocolate hardens completely.
- 8. Store in an airtight container in freezer for up to 2 weeks.
Notes
For best results, use bananas that are ripe but still firm. White chocolate or milk chocolate can be substituted. Add a pinch of sea salt on top for contrast.
