Ingredients

  • 1 whole chicken (about 3 lbs), cut into pieces
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. In a large pot, combine chicken pieces, carrots, celery, onion, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes until chicken is cooked through.
  2. Remove chicken from pot and shred the meat, discarding bones. Return shredded chicken to the pot.
  3. For dumplings: In a mixing bowl, whisk together flour, baking powder, and salt.
  4. Stir in milk and melted butter until just combined; do not overmix.
  5. Drop spoonfuls of batter into the simmering chicken mixture.
  6. Cover and cook for 15-20 minutes until dumplings are fluffy and cooked through.

Notes

For extra fluffiness, avoid peeking while the dumplings cook. Serve hot with a side of mashed potatoes if desired.
