- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 4 cups chicken broth
- Salt and pepper to taste

- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 tablespoons butter, melted
Instructions
- In a large pot, combine chicken pieces, carrots, celery, onion, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes until chicken is cooked through.
- Remove chicken from pot and shred the meat, discarding bones. Return shredded chicken to the pot.
- For dumplings: In a mixing bowl, whisk together flour, baking powder, and salt.
- Stir in milk and melted butter until just combined; do not overmix.
- Drop spoonfuls of batter into the simmering chicken mixture.
- Cover and cook for 15-20 minutes until dumplings are fluffy and cooked through.
Notes
For extra fluffiness, avoid peeking while the dumplings cook. Serve hot with a side of mashed potatoes if desired.
