- 1 whole chicken (about 4 pounds)
- 8 cups water
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the Dumplings:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 cup unsalted butter, cut into small pieces
- 3/4 cup milk
Instructions
- Prepare the Chicken Stew:
- Place the whole chicken in a large pot and cover with 8 cups of water. Add the sliced carrots, celery, diced onion, salt, and black pepper.
- Bring to a boil over high heat, then reduce to a simmer. Cover and cook for about 1 hour, or until the chicken is cooked through and tender.
- Carefully remove the chicken from the pot and let it cool slightly. Shred the meat from the bones and return the shredded chicken to the pot. Discard the skin and bones.
- Make the Dumplings:
- In a bowl, whisk together the flour, baking powder, and salt.
- Cut in the butter until the mixture resembles coarse crumbs.
- Stir in the milk until a soft dough forms.
- Drop spoonfuls of the dough onto the simmering stew. Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy.
- Serve hot.
Notes
For a thicker stew, you can add a slurry of flour and water if desired. Use homemade or low-sodium broth for better flavor control.
