Description

This classic French onion soup features deeply caramelized onions simmered in a rich beef broth, topped with crusty bread and melted Gruyere cheese for the ultimate comfort food.

  • 6 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • 1/4 cup dry sherry (optional)
  • 6 cups beef broth
  • Salt and pepper to taste
  • 1 baguette, sliced
  • 2 cups shredded Gruyere cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, melt butter with olive oil over medium heat. Add onions and cook, stirring occasionally, until deeply caramelized, about 45-60 minutes.
  2. Add garlic, bay leaf, and thyme. Cook for 2 minutes.
  3. Deglaze with sherry if using, then add beef broth. Bring to a simmer and cook for 30 minutes. Season with salt and pepper.
  4. Preheat broiler. Ladle soup into oven-safe bowls. Top with bread slices and cheeses.
  5. Broil until cheese is melted and bubbly, about 2-3 minutes. Serve hot.

Notes

For best results, use a good quality beef broth. You can substitute vegetarian broth for a meat-free version. The soup tastes even better the next day.
