- 6 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon fresh thyme leaves
- 1/4 cup dry sherry (optional)
- 6 cups beef broth
- Salt and pepper to taste
- 1 baguette, sliced
- 2 cups shredded Gruyere cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, melt butter with olive oil over medium heat. Add onions and cook, stirring occasionally, until deeply caramelized, about 45-60 minutes.
- Add garlic, bay leaf, and thyme. Cook for 2 minutes.
- Deglaze with sherry if using, then add beef broth. Bring to a simmer and cook for 30 minutes. Season with salt and pepper.
- Preheat broiler. Ladle soup into oven-safe bowls. Top with bread slices and cheeses.
- Broil until cheese is melted and bubbly, about 2-3 minutes. Serve hot.
Notes
For best results, use a good quality beef broth. You can substitute vegetarian broth for a meat-free version. The soup tastes even better the next day.
