  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups diced apples (peeled and cored)
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a large bowl, whisk together flour, oats, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, mix melted butter, brown sugar, and granulated sugar until smooth. Add eggs, vanilla, and milk, stirring until combined.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Gently fold in diced apples.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  8. For the glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled bread.
  9. Slice and serve once glaze sets.

Notes

For extra texture, add 1/2 cup chopped walnuts or pecans. Store in an airtight container for up to 3 days.
