Ingredients

Scale
  • 4 lbs Yukon Gold potatoes, peeled and cut into wedges
  • 1/2 cup extra virgin olive oil
  • 1 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. Place the potato wedges in a large baking dish.
  3. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
  4. Pour the mixture over the potatoes and toss to coat evenly.
  5. Bake for 45-60 minutes, stirring halfway, until potatoes are golden and tender.
  6. Garnish with fresh parsley before serving.

Notes

For best results, use Yukon Gold potatoes as they hold their shape well. Adjust lemon juice to taste for desired tanginess. Serve hot alongside grilled meats or fish.
