Description

Ingredients

  • 2 lbs Yukon gold potatoes, peeled and cut into wedges
  • 1/2 cup olive oil
  • 1/2 cup chicken broth
  • 1/3 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large roasting pan, combine the olive oil, chicken broth, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Add the potato wedges to the pan and toss them thoroughly to coat with the marinade.
  4. Arrange the potatoes in a single layer, skin side down if applicable.
  5. Roast in the preheated oven for about 45-50 minutes, or until the potatoes are golden brown and tender, basting occasionally with the pan juices.
  6. Remove from the oven and let them rest for a few minutes before serving.
