- 2 lbs Yukon gold potatoes, peeled and cut into wedges
- 1/2 cup olive oil
- 1/2 cup chicken broth
- 1/3 cup fresh lemon juice
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- In a large roasting pan, combine the olive oil, chicken broth, lemon juice, minced garlic, oregano, salt, and pepper.
- Add the potato wedges to the pan and toss them thoroughly to coat with the marinade.
- Arrange the potatoes in a single layer, skin side down if applicable.
- Roast in the preheated oven for about 45-50 minutes, or until the potatoes are golden brown and tender, basting occasionally with the pan juices.
- Remove from the oven and let them rest for a few minutes before serving.
Notes
These potatoes pair wonderfully with grilled meats or fish. For extra crispiness, ensure the oven is fully preheated before adding the potatoes.
