For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp balsamic vinaigrette

Instructions

1. Prepare the Crust:

  1. Preheat grill or grill pan to medium-high heat.
  2. Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
  3. Grill chicken for 6-7 minutes per side or until fully cooked. Let rest for 5 minutes, then slice.
  4. In a large bowl, arrange mixed greens, sliced avocado, cherry tomatoes, red onion, and feta cheese.
  5. Top with sliced grilled chicken and drizzle with balsamic vinaigrette.
  6. Toss gently before serving if desired.
