Tender chicken pieces grilled with sweet pineapple chunks and vegetables, perfect for a summer barbecue.
Ingredients

- 1 lb chicken breast, cubed
- 2 cups pineapple chunks
- 1 red bell pepper, cubed
- 1 green bell pepper, cubed
- 1 red onion, cubed
- Marinade:
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
Instructions
- In a bowl, whisk together soy sauce, honey, olive oil, garlic, and ginger to make the marinade.
- Add chicken cubes to the marinade and let it sit for 30 minutes.
- Preheat grill to medium-high heat.
- Thread chicken, pineapple, bell peppers, and onion onto skewers.
- Grill for 10-12 minutes, turning occasionally, until chicken is cooked through.
Notes
Soak wooden skewers in water for 30 minutes to prevent burning. Serve with rice or salad.
