Description

A hearty soup made with ham, white beans, and vegetables.


Ingredients

  • 1 ham bone
  • 2 cups dried white beans, soaked overnight
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat oil over medium heat and sauté onion, carrots, celery, and garlic until softened.
  2. Add the ham bone, soaked white beans, chicken broth, and bay leaf to the pot.
  3. Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
  4. Remove ham bone, shred any meat, and return it to the soup.
  5. Season with salt and pepper, and serve hot.

Notes

This soup freezes well; add more broth when reheating if needed.
