For the Crust:

  • 2 cups cooked quinoa
  • 2 cups cooked chicken breast, shredded
  • 1 cup fresh pineapple, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine quinoa, chicken, pineapple, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together Greek yogurt, lime juice, honey, salt, and black pepper.
  3. Pour the dressing over the quinoa mixture and toss gently to combine.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
