For the Crust:

  • For the apple filling:
  • 3 medium apples, peeled and diced
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • For the crumble topping:
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 2 tbsp coconut oil, melted
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a bowl, toss the diced apples with lemon juice, cinnamon, nutmeg, maple syrup, and vanilla extract until well coated.
  3. Spread the apple mixture evenly in the prepared baking dish.
  4. In another bowl, mix the rolled oats, almond flour, melted coconut oil, maple syrup, cinnamon, and salt until crumbly.
  5. Sprinkle the crumble topping over the apples, covering them completely.
  6. Bake for 25-30 minutes, or until the topping is golden brown and the apples are tender.
  7. Let cool slightly before serving. Enjoy warm!

Notes

For extra crunch, add chopped nuts like walnuts or pecans to the crumble topping. Serve with a dollop of Greek yogurt or a drizzle of almond butter for added protein.
