These wholesome strawberry oatmeal bars are naturally sweetened, packed with fiber, and perfect for breakfast or snacks. Made with simple ingredients and a delicious jammy strawberry filling!

For the Crust:

  • 2 cups gluten-free rolled oats
  • 1 cup almond flour
  • 1/4 cup coconut sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup melted coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • For the strawberry filling:
  • 2 cups fresh strawberries, diced
  • 2 tbsp chia seeds
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Make the crust/topping: In a large bowl, mix oats, almond flour, coconut sugar, cinnamon, and salt.
  3. Add melted coconut oil, maple syrup, and vanilla. Stir until crumbly but cohesive.
  4. Press 2/3 of the mixture firmly into the prepared pan. Set aside remaining mixture for topping.
  5. Make the filling: In a saucepan over medium heat, combine strawberries, chia seeds, lemon juice, maple syrup, and vanilla.
  6. Cook for 5-7 minutes, mashing strawberries slightly, until thickened. Remove from heat.
  7. Spread filling evenly over crust. Sprinkle reserved oat mixture on top.
  8. Bake for 25-30 minutes until golden. Cool completely before slicing into bars.

Notes

Store in refrigerator for up to 5 days. For firmer bars, chill before serving. Can substitute strawberries with other berries. Make sure all ingredients are certified gluten-free if needed.
