For the Crust:

- 2 cups gluten-free rolled oats
- 1 cup almond flour
- 1/4 cup coconut sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/3 cup melted coconut oil
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- For the strawberry filling:
- 2 cups fresh strawberries, diced
- 2 tbsp chia seeds
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Make the crust/topping: In a large bowl, mix oats, almond flour, coconut sugar, cinnamon, and salt.
- Add melted coconut oil, maple syrup, and vanilla. Stir until crumbly but cohesive.
- Press 2/3 of the mixture firmly into the prepared pan. Set aside remaining mixture for topping.
- Make the filling: In a saucepan over medium heat, combine strawberries, chia seeds, lemon juice, maple syrup, and vanilla.
- Cook for 5-7 minutes, mashing strawberries slightly, until thickened. Remove from heat.
- Spread filling evenly over crust. Sprinkle reserved oat mixture on top.
- Bake for 25-30 minutes until golden. Cool completely before slicing into bars.
Notes
Store in refrigerator for up to 5 days. For firmer bars, chill before serving. Can substitute strawberries with other berries. Make sure all ingredients are certified gluten-free if needed.
