- 2 pounds beef stew meat, cubed
- 1 can (14 ounces) coconut milk
- 3 large carrots, peeled and sliced
- 2 bell peppers, seeded and chopped
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon curry powder
- Salt and pepper to taste
- 4 cups beef broth
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes.
- Stir in onion and garlic; cook until softened, about 3 minutes.
- Add curry powder, salt, and pepper; mix well.
- Pour in coconut milk and beef broth; bring to a boil.
- Add carrots, bell peppers, and potatoes.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
Notes
For extra flavor, marinate the beef overnight. Serve with crusty bread or over rice.
