Ingredients

  • 2 pounds beef stew meat, cubed
  • 1 can (14 ounces) coconut milk
  • 3 large carrots, peeled and sliced
  • 2 bell peppers, seeded and chopped
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon curry powder
  • Salt and pepper to taste
  • 4 cups beef broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides, about 5 minutes.
  3. Stir in onion and garlic; cook until softened, about 3 minutes.
  4. Add curry powder, salt, and pepper; mix well.
  5. Pour in coconut milk and beef broth; bring to a boil.
  6. Add carrots, bell peppers, and potatoes.
  7. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.

Notes

For extra flavor, marinate the beef overnight. Serve with crusty bread or over rice.
