Hearty Irish Lamb Stew is a comforting dish brimming with tender lamb and vibrant vegetables, perfect for cozy nights and family gatherings.


Ingredients

  • Lamb shoulder
  • Carrots
  • Yukon Gold or Russet potatoes
  • Onion
  • Garlic
  • Beef broth
  • Thyme and bay leaves
  • Olive oil
  • Pearl barley (optional)

Instructions

  1. Chop vegetables into even chunks.
  2. Heat olive oil in a large pot over medium heat; brown the lamb on all sides.
  3. Remove the lamb and sauté onions and garlic in the same pot until translucent.
  4. Add carrots, potatoes, thyme, and bay leaves; stir for 3-4 minutes until glistening.
  5. Return lamb to the pot, add beef broth (and barley if using), and bring to a simmer.
  6. Cover partially and cook on low for 1.5 hours or until the lamb is fork-tender.
