- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 cup dried green lentils, rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 2 cups chopped spinach or kale
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Sauté for 5-7 minutes until softened.
- Stir in cumin and thyme, cook for 1 minute until fragrant.
- Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
- Stir in spinach or kale and cook for another 5 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
This soup tastes even better the next day after flavors meld. For added protein, stir in cooked chicken or tofu. Store leftovers in the refrigerator for up to 4 days.
