Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- For the Crust: Mix chocolate wafer crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 10 minutes, then cool.
- For the Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then sour cream, vanilla, cocoa, and flour. Pour over crust.
- Bake for 55-65 minutes until center is almost set. Cool on a wire rack, then refrigerate for 4 hours.
- For the Cherry Topping: In a saucepan, combine cherries, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, about 5-7 minutes. Cool.
- For the Whipped Cream: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Assemble: Spread cherry topping over chilled cheesecake, pipe whipped cream around edges, and garnish with chocolate shavings. Refrigerate until serving.
