For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 3 large eggs
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 2 cups grated carrots
- 1 cup grated apple
- 1/2 cup chopped walnuts
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, oil, and vanilla extract until well combined.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Fold in grated carrots, grated apple, and chopped walnuts.
- Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
