Ingredients

Scale
  • For the Rolls:
  • 1 cup (240ml) whole milk, warmed
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup (57g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon salt
  • 3 1/24 cups (420-480g) all-purpose flour
  • 2 tablespoons fresh chopped parsley
  • 1 tablespoon fresh chopped thyme
  • 1 tablespoon fresh chopped rosemary
  • For the Herb Butter:
  • 1/2 cup (113g) unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh chopped parsley
  • 1 tablespoon fresh chopped thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine warmed milk, sugar, and yeast. Let sit for 10 minutes until foamy.
  2. Add melted butter, egg, salt, and 2 cups of flour. Mix until combined.
  3. Stir in herbs and gradually add remaining flour until a soft dough forms.
  4. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise for 1 hour until doubled in size.
  6. Punch down dough and divide into 12 equal pieces. Shape into balls and place in a greased 9×13 inch baking dish.
  7. Cover and let rise again for 30 minutes.
  8. Bake at 350°F (175°C) for 20-25 minutes until golden brown.
  9. While baking, prepare herb butter by mixing all ingredients together.
  10. Brush warm rolls with herb butter immediately after baking.
  11. Serve warm.

Notes

These rolls freeze well. Thaw and reheat in the oven before serving. Fresh herbs can be substituted with dried if needed, using half the amount.
