Ingredients

  • 4 pounds boneless, skinless turkey breast
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup dry white wine
  • 1 cup chicken broth

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix softened butter, parsley, thyme, rosemary, garlic, salt, and pepper until well combined.
  3. Lay turkey breast flat on a cutting board and pound to an even thickness.
  4. Spread herb butter mixture evenly over the turkey breast.
  5. Starting from one end, tightly roll up the turkey breast and secure with kitchen twine or toothpicks.
  6. Place roulade in a roasting pan and pour wine and broth over it.
  7. Roast for 45-60 minutes, or until internal temperature reaches 165°F (75°C).
  8. Let rest for 10 minutes before slicing.

Notes

For best results, let the roulade rest before slicing to retain juices. Serve with roasted vegetables or a creamy sauce.
