Ingredients

- 2 pounds turkey breast, butterflied
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh herbs (such as thyme, rosemary, and sage), chopped
- Salt and pepper to taste
- 4 slices prosciutto
- Kitchen twine for tying
Instructions
- Butterfly the turkey breast and pound to an even thickness.
- In a bowl, mix softened butter with chopped herbs, salt, and pepper.
- Spread the herb butter over the turkey breast and layer with prosciutto.
- Roll the turkey tightly and tie with kitchen twine.
- Roast in a preheated oven at 375Β°F for 45-50 minutes, or until internal temperature reaches 165Β°F.
- Let rest for 10 minutes, then slice and serve.
Notes
For best results, use fresh herbs. Can be served with gravy.
