A fun and delicious twist on the classic PB&J, these homemade pop tarts are perfect for breakfast or a sweet snack.

For the Crust:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 1/2 cup creamy peanut butter
- 1/4 cup strawberry jelly
- 1 egg, beaten (for egg wash)
- 1/2 cup powdered sugar
- 1 tablespoon milk
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic, and chill for 30 minutes.
- Roll out one disc of dough into a rectangle about 1/8-inch thick. Cut into smaller rectangles (about 3×4 inches).
- Spread a thin layer of peanut butter and jelly on half of the rectangles, leaving a small border. Top with another rectangle and press edges with a fork to seal.
- Brush tops with egg wash and bake at 375°F for 18-20 minutes until golden. Let cool.
- Mix powdered sugar and milk to make a glaze. Drizzle over cooled pop tarts and let set before serving.
