Ingredients

  • 2 pounds carrots, peeled and sliced into sticks
  • 1/4 cup unsalted butter
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Stir in the honey until well combined, then remove from heat.
  4. In a large bowl, toss the carrot sticks with the honey garlic butter mixture, ensuring they are evenly coated. Season with salt and pepper.
  5. Spread the carrots evenly on the prepared baking sheet.
  6. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through.
  7. Remove from the oven and garnish with fresh parsley before serving.

Notes

For a vegan version, substitute butter with a plant-based alternative. Adjust honey for desired sweetness.
