  • 1/2 cup heavy cream
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Garnish: toasted pumpkin seeds

Instructions

  1. Classic Tomato Soup
  2. Heat olive oil in a large pot over medium heat.
  3. Sauté diced onion and minced garlic until translucent.
  4. Add crushed tomatoes and vegetable broth to the pot.
  5. Season with salt and pepper, then simmer for 20 minutes.
  6. Puree soup with an immersion blender until smooth.
  7. Garnish with fresh basil before serving.
  8. Butternut Squash Soup
  9. Preheat oven to 400°F (200°C).
  10. Toss butternut squash cubes with olive oil and roast for 25 minutes.
  11. In a large pot, sauté chopped onion until soft.
  12. Add roasted squash and broth to the pot, then bring to a boil.
  13. Simmer for 15 minutes, then puree using an immersion blender.
  14. Stir in heavy cream and nutmeg, season with salt and pepper.
