Irresistible Churro Cheesecake Donut Cookies

  • 1 ½ cupsall-purpose flour
  • ½ cupunsalted butter, softened
  • ¾ cupgranulated sugar
  • 1large egg
  • 1 tspvanilla extract
  • 1 tspbaking powder
  • ¼ tspsalt
  • 1 tspground cinnamon
  • 4 ozcream cheese, softened
  • ¼ cuppowdered sugar
  • 1 tbspmilk
  • 1 tspground cinnamon (for dusting)
  • ½ cupgranulated sugar (for dusting)
  • 2 tbspmelted butter (for brushing)

Instructions

  1. Preheat your ovento 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl,cream together the softened butter and granulated sugaruntil light and fluffy.
  3. Beat in the egg and vanilla extractuntil well combined.
  4. In another bowl,whisk together the flour, baking powder, salt, and ground cinnamon.
  5. Gradually add the dry ingredientsto the wet ingredients, mixing until just combined.
  6. In a separate bowl,mix the softened cream cheese, powdered sugar, and milkuntil smooth and creamy.
  7. Scoop out tablespoon-sized balls of cookie doughand flatten them slightly on the baking sheet.
  8. Place a small dollop of the cream cheese mixturein the center of each flattened dough ball.
  9. Top each with another flattened dough ball, sealing the edges to encase the cream cheese filling.
  10. Bake for 10-12 minutes, or until the edges are golden brown.
  11. While the cookies are baking,mix the ground cinnamon and granulated sugarin a shallow dish.
  12. Once the cookies are out of the oven and slightly cooled,brush them with melted butterand roll in the cinnamon-sugar mixture until fully coated.
