- 1 lb white fish fillets (such as cod or halibut)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cups cherry tomatoes, halved
- 1/2 cup black olives, pitted and sliced
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- Fresh basil for garnish
Instructions
- Preheat oven to 400Β°F (200Β°C).
- Season the fish fillets with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the fish for 2-3 minutes per side until golden.
- Transfer the seared fish to a baking dish.
- Add cherry tomatoes, olives, garlic, and oregano around the fish in the baking dish.
- Bake in the preheated oven for 10-15 minutes until the fish is flaky and tomatoes are softened.
- Garnish with fresh basil before serving.
