Ingredients

  • 1 lb white fish fillets (such as cod or halibut)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups cherry tomatoes, halved
  • 1/2 cup black olives, pitted and sliced
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. Season the fish fillets with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat and sear the fish for 2-3 minutes per side until golden.
  4. Transfer the seared fish to a baking dish.
  5. Add cherry tomatoes, olives, garlic, and oregano around the fish in the baking dish.
  6. Bake in the preheated oven for 10-15 minutes until the fish is flaky and tomatoes are softened.
  7. Garnish with fresh basil before serving.
