Description

A hearty and flavorful soup made with leftover turkey, vegetables, and herbs. Perfect for using up holiday leftovers in a comforting bowl.


Ingredients

  • 2 cups cooked turkey, diced
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 6 cups chicken or turkey broth
  • 2 cups cooked rice or noodles (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Sauté for 5-7 minutes until softened.
  3. Stir in thyme and bay leaf, then pour in the broth.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add diced turkey and optional rice or noodles. Simmer for another 10 minutes.
  6. Season with salt and pepper to taste. Remove bay leaf before serving.

Notes

Adjust seasoning as needed. Store leftovers in the refrigerator for up to 3 days.
