A hearty and flavorful soup made with leftover turkey, vegetables, and herbs. Perfect for using up holiday leftovers in a comforting bowl.
Ingredients

- 2 cups cooked turkey, diced
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 6 cups chicken or turkey broth
- 2 cups cooked rice or noodles (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Sauté for 5-7 minutes until softened.
- Stir in thyme and bay leaf, then pour in the broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add diced turkey and optional rice or noodles. Simmer for another 10 minutes.
- Season with salt and pepper to taste. Remove bay leaf before serving.
Notes
Adjust seasoning as needed. Store leftovers in the refrigerator for up to 3 days.
