Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 blocks (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat oven to 325Β°F and line an 8Γ—8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined; press into the bottom of the pan.
  3. In a separate bowl, beat cream cheese and sugar until smooth; add eggs one at a time.
  4. Mix in sour cream, lemon zest, and lemon juice until fully incorporated.
  5. Gently fold in blueberries and pour the mixture over the crust.
  6. Bake for 40-45 minutes or until the center is set.
  7. Cool completely, then refrigerate for at least 2 hours before cutting into bars.

Notes

For best results, use fresh blueberries and chill the bars overnight.
