- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup lemon juice
- 1/4 cup lime juice
- 1 cup pitted cherries, chopped
- 1/2 cup pistachios, chopped
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Stir in lemon juice, lime juice, cherries, pistachios, and vanilla.
- Pour mixture over crust and bake for 55-60 minutes.
- Cool completely before refrigerating for at least 4 hours.
Notes
For best results, use fresh cherries and pistachios. Chill overnight for enhanced flavor.
