Description

A creamy cheesecake combining the zesty flavors of lemon and lime with sweet cherries and crunchy pistachios.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup lemon juice
  • 1/4 cup lime juice
  • 1 cup pitted cherries, chopped
  • 1/2 cup pistachios, chopped
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each.
  5. Stir in lemon juice, lime juice, cherries, pistachios, and vanilla.
  6. Pour mixture over crust and bake for 55-60 minutes.
  7. Cool completely before refrigerating for at least 4 hours.

Notes

For best results, use fresh cherries and pistachios. Chill overnight for enhanced flavor.
