Description

A creamy, comforting soup loaded with all the toppings of a baked potato: bacon, cheese, sour cream, and chives. Perfect for a cozy meal.


Ingredients

  • 4 large baking potatoes, peeled and cubed
  • 8 slices bacon
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 1 cup sour cream
  • 2 cups shredded sharp Cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup chopped fresh chives

Instructions

  1. Place potatoes in a pot and cover with water. Bring to a boil, reduce heat, and simmer until tender, about 15 minutes. Drain and set aside.
  2. In a large skillet, cook bacon until crispy. Remove bacon and crumble. Reserve 1 tablespoon bacon drippings in the skillet.
  3. Melt butter in the skillet. Whisk in flour and cook for 1 minute.
  4. Gradually whisk in milk, cooking until thickened.
  5. Stir in potatoes, sour cream, cheese, salt, pepper, and garlic powder. Heat until cheese melts.
  6. Serve topped with crumbled bacon and chives.

Notes

For extra creaminess, blend half the soup before adding toppings. Store leftovers in an airtight container in the refrigerator for up to 3 days.
