- 4 large baking potatoes, peeled and cubed
- 8 slices bacon
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups milk
- 1 cup sour cream
- 2 cups shredded sharp Cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup chopped fresh chives
Instructions
- Place potatoes in a pot and cover with water. Bring to a boil, reduce heat, and simmer until tender, about 15 minutes. Drain and set aside.
- In a large skillet, cook bacon until crispy. Remove bacon and crumble. Reserve 1 tablespoon bacon drippings in the skillet.
- Melt butter in the skillet. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk, cooking until thickened.
- Stir in potatoes, sour cream, cheese, salt, pepper, and garlic powder. Heat until cheese melts.
- Serve topped with crumbled bacon and chives.
Notes
For extra creaminess, blend half the soup before adding toppings. Store leftovers in an airtight container in the refrigerator for up to 3 days.
