- 4 large baking potatoes, baked
- 6 slices bacon, cooked and crumbled
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 6 cups milk
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- Salt and pepper to taste
- Optional toppings: extra cheese, bacon, sour cream, chives
Instructions
- Step 1: Bake potatoes until tender, then cool slightly and scoop out the flesh, leaving skins aside for another use.
- Step 2: In a large pot, melt butter over medium heat. Stir in flour and cook for 2-3 minutes to make a roux.
- Step 3: Gradually whisk in milk and bring to a simmer, stirring until thickened.
- Step 4: Stir in potato flesh, sour cream, cheese, and most of the green onions. Season with salt and pepper.
- Step 5: Simmer on low for 10-15 minutes. Serve topped with remaining bacon, cheese, sour cream, and chives.
Notes
For a lighter version, use low-fat milk and sour cream. Soup thickens as it cools, so add a splash of milk when reheating.
