Ingredients

  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 1 cup milk
  • Salt and pepper, to taste
  • 1 pound breakfast sausage
  • 4 croissants, sliced in half
  • 2 tablespoons butter
  • 2 eggs, poached or fried (optional)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Hot sauce, for serving (optional)

Instructions

  1. In a large saucepan, bring the chicken broth to a boil.
  2. Slowly whisk in the grits and reduce heat to low.
  3. Simmer, stirring occasionally, for 20-25 minutes until thickened.
  4. Stir in milk and season with salt and pepper; cook for another 5 minutes.
  5. In a skillet, cook the sausage over medium heat until browned and cooked through, about 8-10 minutes. Drain excess fat.
  6. Remove from heat and set aside.
  7. In the same skillet, toast the croissant halves until golden, about 2-3 minutes per side.
  8. Remove grits from heat and stir in butter and shredded cheese until melted.
  9. Divide grits into bowls.
  10. Top with cooked sausage, toasted croissants, and green onions.
  11. Add a poached egg on top if desired.
  12. Serve immediately with hot sauce if desired.

Notes

For creamier grits, use half water and half milk. Adjust spice levels with more hot sauce. Leftovers can be refrigerated and reheated.
