- 1 cup stone-ground grits
- 4 cups chicken broth
- 1 cup milk
- Salt and pepper, to taste
- 1 pound breakfast sausage
- 4 croissants, sliced in half
- 2 tablespoons butter
- 2 eggs, poached or fried (optional)
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Hot sauce, for serving (optional)
Instructions
- In a large saucepan, bring the chicken broth to a boil.
- Slowly whisk in the grits and reduce heat to low.
- Simmer, stirring occasionally, for 20-25 minutes until thickened.
- Stir in milk and season with salt and pepper; cook for another 5 minutes.
- In a skillet, cook the sausage over medium heat until browned and cooked through, about 8-10 minutes. Drain excess fat.
- Remove from heat and set aside.
- In the same skillet, toast the croissant halves until golden, about 2-3 minutes per side.
- Remove grits from heat and stir in butter and shredded cheese until melted.
- Divide grits into bowls.
- Top with cooked sausage, toasted croissants, and green onions.
- Add a poached egg on top if desired.
- Serve immediately with hot sauce if desired.
Notes
For creamier grits, use half water and half milk. Adjust spice levels with more hot sauce. Leftovers can be refrigerated and reheated.
