For the Crust:
- For the latte base:
- 1 cup unsweetened almond milk (or coconut milk)
- 1/2 cup brewed coffee or espresso
- 1 tbsp grated carrot (finely grated, packed)
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- Pinch of cloves
- For sweetener & topping:
- 1 tbsp sugar-free maple syrup or erythritol
- 1 tbsp whipped coconut cream (optional)
- 1 tsp chopped walnuts (optional)
- Dash of cinnamon (for garnish)
Instructions
1. Prepare the Crust:
- 1. In a small saucepan over medium heat, combine almond milk, grated carrot, cinnamon, nutmeg, ginger, and cloves. Whisk well and simmer for 3-4 minutes until fragrant and slightly thickened.
- 2. Remove from heat and strain through a fine-mesh sieve to remove carrot pulp (optional for smoother texture).
- 3. Return the spiced milk mixture to the saucepan. Add brewed coffee and vanilla extract. Heat gently until warm (do not boil).
- 4. Pour into a blender and blend for 10-15 seconds until frothy (or use a milk frother).
- 5. Sweeten with sugar-free syrup or erythritol to taste.
- 6. Pour into a mug and top with whipped coconut cream, walnuts, and a dash of cinnamon if desired.
Notes
For a creamier texture, use full-fat coconut milk. Adjust spices to taste—cardamom adds a nice twist! Store leftover grated carrot in the fridge for future lattes.
