- 2 lbs butternut squash, peeled, seeded, and cubed
- 2 tablespoons olive oil
- 3 tablespoons pure maple syrup
- 1 teaspoon ground cinnamon
- Salt and black pepper to taste
- 1/4 cup chopped pecans (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the butternut squash cubes with olive oil, maple syrup, cinnamon, salt, and pepper until evenly coated.
- Spread the squash in a single layer on a lined baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and garnish with chopped pecans if desired. Serve warm.
Notes
Adjust maple syrup to taste; add a pinch of cayenne for a spicy kick. Store leftovers in an airtight container in the fridge for up to 3 days.
