Ingredients

- 1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- Glaze:
- 1/4 cup pure maple syrup
- 2 tablespoons butter
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- Optional: Chopped pecans for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss the butternut squash cubes with olive oil, salt, and black pepper on a baking sheet.
- Roast for 25-30 minutes, or until squash is tender and starting to caramelize, stirring halfway through.
- While the squash roasts, prepare the glaze: In a small saucepan, combine maple syrup, butter, cinnamon, and ginger over medium heat. Stir until butter is melted and mixture is smooth. Remove from heat.
- After roasting, drizzle the glaze over the squash and toss to coat evenly.
- Return to the oven for another 5-10 minutes to allow the glaze to thicken and adhere.
- Remove from oven, garnish with pecans if desired, and serve warm.
Notes
For extra crunch, broil for the last 2 minutes. Adjust sweetness by reducing maple syrup if preferred.
