Description

Sweet and savory roasted butternut squash glazed with maple syrup, perfect as a side dish for fall meals.


Ingredients

  • 1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Glaze:
  • 1/4 cup pure maple syrup
  • 2 tablespoons butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Optional: Chopped pecans for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss the butternut squash cubes with olive oil, salt, and black pepper on a baking sheet.
  3. Roast for 25-30 minutes, or until squash is tender and starting to caramelize, stirring halfway through.
  4. While the squash roasts, prepare the glaze: In a small saucepan, combine maple syrup, butter, cinnamon, and ginger over medium heat. Stir until butter is melted and mixture is smooth. Remove from heat.
  5. After roasting, drizzle the glaze over the squash and toss to coat evenly.
  6. Return to the oven for another 5-10 minutes to allow the glaze to thicken and adhere.
  7. Remove from oven, garnish with pecans if desired, and serve warm.

Notes

For extra crunch, broil for the last 2 minutes. Adjust sweetness by reducing maple syrup if preferred.
