Description

A sweet and savory side dish featuring butternut squash glazed with maple syrup.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. In a large bowl, toss the cubed butternut squash with maple syrup, olive oil, salt, pepper, and thyme leaves until evenly coated.
  3. Spread the squash evenly on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the squash is tender and caramelized.

Notes

For a spicier version, add a pinch of cayenne pepper. Best served fresh.
