- 1 medium butternut squash, peeled and cubed
- 1/4 cup pure maple syrup
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- In a large bowl, toss the cubed butternut squash with maple syrup, olive oil, salt, pepper, and thyme leaves until evenly coated.
- Spread the squash evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the squash is tender and caramelized.
Notes
For a spicier version, add a pinch of cayenne pepper. Best served fresh.
