- 2 tbsp cold unsalted butter, cubed
Instructions
1. Prepare the Crust:
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the melted butter, maple syrup, eggs, vanilla extract, and buttermilk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- In a small bowl, toss the diced apples with lemon juice, sugar, and cinnamon. Fold the apple mixture into the muffin batter.
- For the topping, combine the flour, brown sugar, and cinnamon in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the topping over each muffin.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
