For the Crust:
- 1 lb boneless, skinless chicken breasts
- 8 oz fettuccine pasta
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken until golden and cooked through (about 6-7 minutes per side). Remove and slice.
- In the same skillet, add garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for 1-2 minutes until fragrant.
- Pour in chicken broth and heavy cream. Bring to a simmer, then stir in Parmesan cheese until melted and smooth.
- Add cooked pasta and sliced chicken to the sauce. Toss to coat evenly and heat through.
- Garnish with fresh basil before serving.
