Description

Crispy and cheesy puffs made from leftover mashed potatoes, perfect for a quick snack or appetizer.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1 large egg, beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chopped chives

Instructions

  1. In a large bowl, combine the mashed potatoes, shredded cheese, beaten egg, flour, salt, and pepper. Mix until well combined.
  2. If using, fold in the chopped chives.
  3. Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  4. Scoop tablespoon-sized portions of the mixture and roll into balls, then place them on the prepared baking sheet.
  5. Bake for 15-20 minutes, or until the puffs are golden brown and crispy on the outside.
  6. Remove from the oven and let cool slightly before serving.

Notes

These puffs are best served warm. You can experiment with different cheeses for varied flavors.
