- 1 cupwhole wheat flour
- 1 cupgrated carrots
- 1/2 cupgrated zucchini
- 1/2 cupunsweetened applesauce
- 1/2 cupbrown sugar
- 1/4 cuphoney or maple syrup
- 1/4 cupvegetable oil
- 3large eggs
- 1 teaspoonbaking soda
- 1 teaspoonbaking powder
- 1 teaspoonground cinnamon
- 1/2 teaspoonsalt
- 1/2 cupchopped walnuts or pecans (optional)
- 1/2 cupraisins or dried cranberries
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the all-purpose flour, whole wheat flour, baking soda, baking powder, ground cinnamon, and salt.
- In another bowl, whisk together the eggs, brown sugar, honey or maple syrup, vegetable oil, and applesauce until smooth.
- Gradually combine the wet ingredients into the dry mixture. Fold in the grated carrots and zucchini, along with optional nuts and dried fruit. Mix gently until just combined.
- Spoon batter into prepared muffin tins, filling each liner about two-thirds full.
- Bake for approximately 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Let cool on a wire rack before serving.
