- 9 lasagna noodles
- 2 cups fresh spinach, chopped
- 2 cups mushrooms, sliced
- 1 cup ricotta cheese
- 1/2 cup Parmesan cheese, grated
- 1 egg
- 2 cups marinara sauce
- Salt and pepper to taste
- 1 teaspoon garlic powder
Instructions
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a skillet, sauté mushrooms and spinach until softened; let cool.
- In a bowl, mix ricotta, Parmesan, egg, garlic powder, salt, and pepper; stir in mushroom mixture.
- Spread marinara sauce in a baking dish.
- Spread cheese mixture on each noodle and roll up; place in baking dish.
- Top with more sauce and cheese; bake at 375°F for 25-30 minutes.
