  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • For the filling:
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • For the swirls:
  • 3 different neon food coloring gels (pink, blue, green)
  • 3 small bowls

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
  2. 2. Make crust: Mix graham crumbs, sugar, and melted butter. Press firmly into pan. Bake 10 minutes, then cool.
  3. 3. Make filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
  4. 4. Divide batter into 3 bowls. Add different food coloring to each, mixing thoroughly.
  5. 5. Alternate spoonfuls of colored batter over crust. Swirl gently with a knife.
  6. 6. Bake 40-45 minutes until center is slightly jiggly. Cool completely, then chill 4+ hours before cutting.

Notes

For cleaner cuts, wipe knife between slices. Store refrigerated up to 5 days. Colors intensify after chilling!
