- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tbsp unsalted butter, melted
- For the filling:
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- For the swirls:
- 3 different neon food coloring gels (pink, blue, green)
- 3 small bowls
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
- 2. Make crust: Mix graham crumbs, sugar, and melted butter. Press firmly into pan. Bake 10 minutes, then cool.
- 3. Make filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
- 4. Divide batter into 3 bowls. Add different food coloring to each, mixing thoroughly.
- 5. Alternate spoonfuls of colored batter over crust. Swirl gently with a knife.
- 6. Bake 40-45 minutes until center is slightly jiggly. Cool completely, then chill 4+ hours before cutting.
Notes
For cleaner cuts, wipe knife between slices. Store refrigerated up to 5 days. Colors intensify after chilling!
