- 1.5 cups graham cracker crumbs
- 6 tbsp unsalted butter (melted)
- 1/4 cup granulated sugar
- For the filling:
- 16 oz cream cheese (softened)
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- For topping:
- 1/2 cup chocolate chips
- 2 tbsp peanut butter (melted)
Instructions
1. Prepare the Crust:
- 1. Line an 8Γ8 inch baking pan with parchment paper, leaving overhang for easy removal.
- 2. Make crust: Mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into prepared pan. Chill 15 minutes.
- 3. Make filling: Beat cream cheese until smooth. Add peanut butter, powdered sugar, and vanilla; mix until creamy.
- 4. In a separate bowl, whip heavy cream to stiff peaks. Fold into peanut butter mixture until no streaks remain.
- 5. Spread filling over chilled crust. Smooth top with spatula.
- 6. Make topping: Melt chocolate chips and peanut butter together, then drizzle over bars.
- 7. Chill at least 4 hours (preferably overnight) before slicing into squares.
Notes
For cleaner slices, dip knife in hot water before cutting. Store leftovers covered in refrigerator for up to 5 days. May be frozen for up to 1 month.
