A delicious and healthy no-bake pie with a creamy chia seed filling and fresh blueberry topping.

For the Crust:
- 1 cup almonds
- 1 cup dates, pitted
- 1/4 cup shredded coconut
- 1/4 cup maple syrup
- 2 cups fresh blueberries
- 1/4 cup chia seeds
- 1 can full-fat coconut milk
- 1 tsp vanilla extract
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Blend almonds, dates, and shredded coconut in a food processor until a sticky dough forms.
- Press the mixture into a pie dish to form the crust and refrigerate for 30 minutes.
- In a bowl, whisk together chia seeds, coconut milk, maple syrup, vanilla extract, and lemon juice. Let sit for 10 minutes.
- Spread the chia seed mixture over the crust and top with fresh blueberries.
- Chill in the refrigerator for at least 4 hours or overnight before serving.
