- 3 cups quick-cooking oats
Instructions
1. Prepare the Crust:
- Line a baking sheet with parchment paper or wax paper and set aside.
- In a medium saucepan, combine the sugar, butter, milk, and cocoa powder. Bring to a boil over medium heat, stirring constantly.
- Once boiling, let the mixture cook for 1 minute without stirring, then remove from heat.
- Stir in the peanut butter and vanilla extract until smooth and fully combined.
- Add the oats and mix well until all the oats are coated with the chocolate mixture.
- Drop spoonfuls of the mixture onto the prepared baking sheet, shaping them into cookies.
- Let the cookies cool and set at room temperature for about 30 minutes, or until firm.
- Store in an airtight container at room temperature for up to 1 week.
Notes
For a nut-free version, substitute the peanut butter with sunflower seed butter. If the mixture is too runny, add a little more oats. For a firmer texture, refrigerate the cookies for 15 minutes before serving.
