- 1/4 cup maple syrup

- 2 tbsp chopped walnuts
- 1 tbsp shredded coconut
Instructions
1. Prepare the Crust:
- 1. Preheat your waffle iron according to manufacturer instructions.
- 2. In a blender, pulse the oats until they form a coarse flour.
- 3. Add all remaining waffle ingredients (except carrots) and blend until smooth.
- 4. Stir in grated carrots by hand.
- 5. Lightly grease the waffle iron and pour batter (about 1/3 cup per waffle).
- 6. Cook until golden brown and crisp (about 4-5 minutes depending on your iron).
- 7. For the topping: Mix yogurt with maple syrup. Drizzle over waffles and sprinkle with walnuts and coconut.
Notes
For crispier waffles, let batter sit for 5 minutes before cooking. Leftovers freeze well – reheat in toaster. Substitute almond flour for oats if desired (use 1.5 cups).
