These fluffy carrot cake waffles are made without flour, packed with wholesome ingredients, and taste just like dessert for breakfast! Gluten-free and naturally sweetened.

For the Crust:

  • For the waffles:
  • 2 cups rolled oats (gluten-free if needed)
  • 1 cup grated carrots (packed)
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 tsp baking powder
  • 1/4 tsp salt
  • For the topping (optional):
  • 1/4 cup Greek yogurt
  • 1 tbsp maple syrup
  • 2 tbsp chopped walnuts
  • 1 tbsp shredded coconut

Instructions

1. Prepare the Crust:

  1. 1. Preheat your waffle iron according to manufacturer instructions.
  2. 2. In a blender, pulse the oats until they form a coarse flour.
  3. 3. Add all remaining waffle ingredients (except carrots) and blend until smooth.
  4. 4. Stir in grated carrots by hand.
  5. 5. Lightly grease the waffle iron and pour batter (about 1/3 cup per waffle).
  6. 6. Cook until golden brown and crisp (about 4-5 minutes depending on your iron).
  7. 7. For the topping: Mix yogurt with maple syrup. Drizzle over waffles and sprinkle with walnuts and coconut.

Notes

For crispier waffles, let batter sit for 5 minutes before cooking. Leftovers freeze well – reheat in toaster. Substitute almond flour for oats if desired (use 1.5 cups).
