Instructions

1. Prepare the Crust:

  1. In a microwave-safe mug, mix the oats, almond flour, and baking powder.
  2. Add the maple syrup, almond milk, and vanilla extract. Stir until well combined.
  3. In a small bowl, toss the diced peaches with cinnamon and brown sugar (if using).
  4. Spoon the peach mixture over the batter in the mug.
  5. Microwave on high for 1 minute 30 seconds to 2 minutes, or until the cake is set but still moist.
  6. Let cool for 1 minute before serving. Enjoy warm!
