For the Crust:
- For the base:
- 1 cup raw cashews
- 1 cup unsweetened shredded coconut
- 1/4 cup coconut flour
- 2 tbsp chia seeds
- For flavor & binding:
- 1/4 cup coconut oil, melted
- 3 tbsp honey or maple syrup
- Zest of 2 limes
- 2 tbsp fresh lime juice
- 1 tsp vanilla extract
- For coating:
- 1/2 cup unsweetened shredded coconut (for rolling)
Instructions
1. Prepare the Crust:
- 1. In a food processor, pulse cashews until finely ground (but not butter).
- 2. Add shredded coconut, coconut flour, and chia seeds. Pulse to combine.
- 3. In a small bowl, whisk together melted coconut oil, honey/maple syrup, lime zest, lime juice, and vanilla.
- 4. Pour wet ingredients into the food processor. Process until mixture sticks together when pressed.
- 5. Scoop 1-tbsp portions and roll into balls.
- 6. Roll each ball in extra shredded coconut to coat.
- 7. Chill in refrigerator for 1 hour to firm up before serving.
Notes
Store in an airtight container in the fridge for up to 2 weeks. For a tropical twist, add 1/4 cup diced dried pineapple to the mixture.
