No Oatmeal! Coconut Lime Energy Bites

These zesty coconut lime energy bites are a refreshing, no-bake snack packed with natural ingredients. Perfect for a quick energy boost without oats!

For the Crust:

  • For the base:
  • 1 cup raw cashews
  • 1 cup unsweetened shredded coconut
  • 1/4 cup coconut flour
  • 2 tbsp chia seeds
  • For flavor & binding:
  • 1/4 cup coconut oil, melted
  • 3 tbsp honey or maple syrup
  • Zest of 2 limes
  • 2 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • For coating:
  • 1/2 cup unsweetened shredded coconut (for rolling)

Instructions

1. Prepare the Crust:

  1. 1. In a food processor, pulse cashews until finely ground (but not butter).
  2. 2. Add shredded coconut, coconut flour, and chia seeds. Pulse to combine.
  3. 3. In a small bowl, whisk together melted coconut oil, honey/maple syrup, lime zest, lime juice, and vanilla.
  4. 4. Pour wet ingredients into the food processor. Process until mixture sticks together when pressed.
  5. 5. Scoop 1-tbsp portions and roll into balls.
  6. 6. Roll each ball in extra shredded coconut to coat.
  7. 7. Chill in refrigerator for 1 hour to firm up before serving.

Notes

Store in an airtight container in the fridge for up to 2 weeks. For a tropical twist, add 1/4 cup diced dried pineapple to the mixture.
