  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups milk (dairy or plant-based)
  • 1 large apple, diced (about 1 1/2 cups)
  • 1/4 cup maple syrup
  • 1 large egg
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • For the topping:
  • 1/4 cup chopped walnuts or pecans
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
  2. In a large bowl, combine oats, milk, diced apple, maple syrup, egg, melted butter, vanilla, cinnamon, nutmeg, and salt. Mix well.
  3. Pour mixture into prepared baking dish and spread evenly.
  4. In a small bowl, mix together topping ingredients: nuts, brown sugar, and cinnamon. Sprinkle evenly over the oat mixture.
  5. Bake for 35-40 minutes, until set and golden brown on top.
  6. Let cool for 5-10 minutes before serving. Serve warm with additional milk or yogurt if desired.

Notes

Store leftovers covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave with a splash of milk. For a dairy-free version, use plant-based milk and coconut oil.
