- 2 cups old-fashioned rolled oats
- 1 1/2 cups milk (dairy or plant-based)
- 1 large apple, diced (about 1 1/2 cups)
- 1/4 cup maple syrup
- 1 large egg
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- For the topping:
- 1/4 cup chopped walnuts or pecans
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- In a large bowl, combine oats, milk, diced apple, maple syrup, egg, melted butter, vanilla, cinnamon, nutmeg, and salt. Mix well.
- Pour mixture into prepared baking dish and spread evenly.
- In a small bowl, mix together topping ingredients: nuts, brown sugar, and cinnamon. Sprinkle evenly over the oat mixture.
- Bake for 35-40 minutes, until set and golden brown on top.
- Let cool for 5-10 minutes before serving. Serve warm with additional milk or yogurt if desired.
Notes
Store leftovers covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave with a splash of milk. For a dairy-free version, use plant-based milk and coconut oil.
